Pumpkin Spice Muffins- A Healthier Snack or Dessert Option

So, many of you know that I’ve been on Weight Watchers for a few months now. I’ve been doing pretty good, and have lost about 1/2 of the weight I need to make my goal weight. This time of the year is probably going to be the toughest for me, as far as watching my points, and still losing weight, or at least, not gaining any.

Walmart wanted me to share a recipe to help get through the holidays, just a little bit healthier, and I knew exactly what recipe I needed to share with you. At one of my last meetings, we talked about a new recipe that someone had heard about that was only 1 point, and super yummy! It even turned out to be totally perfect for the season! I love pumpkin, and this turns out to be more of a treat than a healthy snack, but for only one point, I can afford to eat these.. in moderation!

Head down to your local Walmart store, and grab your ingredients to make this yummy recipe!

Here’s all you need!

1 (18 ounce) box cake mix

15 ounces of  pumpkin puree

1/2 cup water

Muffin Cup liners

Muffin pan

Here’s how you make it:

1. Preheat oven to 350.
2. Mix all ingredients together.

3. Put muffin cup liners in the pan and fill each cup about 2/3 full.

4. Bake for  22 -26 minutes.

These turned out so moist and yummy! I seriously couldn’t believe that they are only one point on the Weight Watchers scale. These are perfect for snacks, or even as an alternative to pumpkin pie on Thanksgiving!
