Plan a Romantic Dinner for Valentine's Day- at home!

Being a very busy family, when a holiday hits in the middle of the week, it’s beyond difficult to try and celebrate out. Besides, many restaurants have “specials” that are really just multiple course meals with inflated prices. I’d rather save the money. Sometimes, I really feel like Valentine’s Day is just yet another day of the week. This year, I really wanted to do something to make it seem special, even though it’s still a work night and still a school night.

This year, with the help of Walmart, I’m making sure that Valentine’s Dinner is as fun, and romantic as I can, and you can too! I’ve actually planned a very special dinner, and I’m sharing it with you!

VDayDinnerCloseMy Valentine’s Dinner is going to be Baked Cajun Pork Tenderloin, with home made fried rice, sauteed zucchini, and a bavarian pretzel roll. Everything is super easy to make, and it’s really good!

For the pork tenderloin, all you have to do is put it in a deep baking dish and cover it with garlic powder, and cajun seasoning. Bake on 375 for about 30 mins or until internal temperature reaches at least 145F.
For the Fried Rice, you have to plan ahead a little bit. Make the rice ahead of time and chill in the refrigerator. Heat up a frying pan with a small amount of olive oil. Heat it up, add in chopped red bell pepper, chopped onion, and soy sauce to taste. You can also add in fresh garlic if desired. Cook until heated thoroughly.
The Sauteed Zucchini is just as easy. Wash and then cut into medallion sized slices. Heat up a skillet with a little bit of olive oil or margarine. Toss zucchini in and season as you’d like. We used garlic, salt and pepper. It was that easy.
The bavarian pretzel rolls are pretty much just heat and serve.
All of these ingredients, including my taper candles came from my local Walmart store! Other items I’ve had over the years.
Of course, there will be two more place settings at the table for Valentine’s Day. We will celebrate as a family, and my girls will totally get a kick out of having dinner by candlelight! After they go to bed, hubby and I will probably snuggle up and watch a movie together.
