Game Time Recipe: Luau Bruschetta

Ok, so the biggest game of the entire football season is coming up next weekend. Many of you will be throwing parties, and having groups of people over, and you need something to serve, that’s quick, easy, and inexpensive… Well, we have a recipe for you that fits all three of those, and it’s quite yummy too! We got everything we needed at our local Walmart Neighborhood Market!

Mr MommyBrain and I decided to do a little experimenting in the kitchen, and have some fun with making finger foods. This idea was totally on a whim, and something we liked out of all the other ideas we came up with… so head over to your local Walmart store to grab the ingredients, and give it a try. I’d love to know what you think! We call it Luau Bruschetta…

What you need:

Not pictured: Fresh Pineapple Spears

3 packs Hillshire Farm Turkey Kielbasa Sausage

1 small red onion, diced

1 green bell pepper, diced

1 cup pineapple spears, cut into small flat pieces (optional, but highly recommended)

1/2 cup Sweet Baby Ray’s Sweet & Spicy BBQ Sauce

4 Loaves Wheat French Bread

2 tubs Low Fat Cream Cheese

How you make it:

Slice French Bread into 1/4 in thick slices and lay out on a baking sheet.

Broil on high (oven rack in center of over) for about 2 minutes, or until lightly toasted.

Repeat until all loaves are sliced and toasted.

Put onion and bell pepper into a sauce pan and cook until heated through.

Slice sausage into thin rounds (about 1/8in thick) and add to sauce pan, heating thoroughly.

Add pineapple and barbecue sauce and stir until well coated.

Spread a thin layer of cream cheese on each slice of bread, and spoon a slice of pineapple, 1/2 tsp of pepper/onion and 3 sausage rounds, onto each piece of toast.

Spread onto a platter and serve!

Like I said, we were totally thinking of fun and easy foods to make, and thought this gave the traditional bruschetta a little twist… If you’d like to add a little spice, you can toss in some chili flakes, or add other seasonings… but this was fun to make and tasted great!
