Holiday Leftovers Recipe- Ham and Egg Muffins

Our favorite dish for Christmas dinner is the Brown Sugar Glazed Ham from Walmart! Every year, we buy “the purple ham”, lovingly named for it’s purple foil wrapping, and can’t wait to make it! Mostly because we know there will be leftovers, and leftovers are awesome! We’ve tried other, some more expensive, hams, and always go back to this one. It just can’t be beat.

One of my favorite things to make with my leftover ham is these Ham & Egg Muffins, complete with spinach, onion and cheese! They are super easy to make, and are perfect for a quick breakfast, or for the kids to heat up when mom and dad want to sleep in just a few more minutes!

All you need:

ingredients

12 eggs or equivalent in egg whites

1/4 cup water

1 cup diced Brown Sugar Ham

1 cup chopped raw spinach

1/2 cup chopped onion

2 tbsp chopped sun dried tomatoes

Shredded Cheese (We used fat free cheddar)

Muffin pan

Cooking spray

How to make it:

  1. Dice & chop all ingredients!
  2. Preheat over to 350ºF
  3. In a separate bowl, beat 15 eggs, 1/4 cup water, and season as you wish.
  4. Pour egg mixture over ham, and add spinach and onion.
  5. Spray muffin pan generously with cooking spray.
  6. Ladle in egg and ham mixture evenly into each muffin cup until about 3/4 full.
  7. Drop in Sun Dried Tomatoes
  8. Sprinkle desired amount cheese on top.
  9. Bake for about 25 minutes.
  10. It will be done when a skewer, fork, or toothpick comes out clean when poked in the center.
  11. Enjoy!
