Simple Meals Made Easy- Pork Tenderloin & Peppers

I wanted to share a quick and fairly easy recipe that we use quite often on busy days.

It takes just 20 mins and just a few ingredients! I was able to get everything I needed for my recipe at my local Walmart store.

What you need:

1 Pound Pork Tenderloin

2 Bell Peppers (Red & Yellow)

2 Teaspoons Basalmic Vinegar

Olives (kalamata or green) chopped

1.5 tsp chopped fresh rosemary

2 Tbsp minced Garlic

Kosher Salt & pepper to taste

 

How to make it:

1. Trim the Pork Tenderloin and cut into 1 inch thick slices.

2. Slice Bell Peppers into 1.5 in strips.

3. Heat a large skillet over medium-high heat. Sprinkle the pork with the salt & pepper. Add oil to the pan, and swirl to coat. Add pork to the pan and cook for about 5 minutes.

4. Reduce the heat to medium and turn the pork over. Add Basalmic vinegar, rosemary, olives, garlic and peppers. Cook until peppers are tender and pork reaches at least 155F internal temp.

5. Serve and enjoy! 1 serving approx 3 oz Pork and approx 1/2 cup pepper mixture.

This recipe is one of my family’s absolute favorites! The pork turns out tender and juicy every time, and the flavor is just amazing… not overpowering.
