Recipe- Meatless Spaghetti Squash

It is now the time of a solemn religious observance in the liturgical calendar of many Christian denominations, that begins on Ash Wednesday and covers a period of approximately six weeks before Easter Sunday, otherwise known as Lent. During this time, those in observance will usually refrain from eating meat on Fridays, and some will not eat meat at all during the season.

I was asked to share one of my favorite meatless recipes with you, in hopes that it would make it a little easier to plan your meals!

One of my absolute favorite meatless recipes is Spaghetti Squash, made just like regular spaghetti, but instead of ground beef, I used tofu crumbles!

Lent Ingredients

What you need:

  • A Spaghetti Squash
  • Meatless Pasta Sauce
  • MorningStar Tofu Crumbles
  • Your choice of fresh veggies to toss in!

How you make it:

First, you’ll need to preheat the over to 400F. Next, cut the spaghetti squash in half. You can bake it whole, but this seems to cook a little bit faster.

Place the squash on a baking sheet and place into the oven to bake for about 30 mins. If you’re short on time, place each half into the microwave for about 5 mins each. I love this method when I’m in a hurry for lunch!

Take your MorningStar Tofu Crumbles and toss into a non-stick pan. Add enough water to coat and heat up until well cooked. Add in any fresh vegetables you’d like to cook with it… I used green and yellow bell peppers, but you can use anything that you like in regular spaghetti!

Pour the sauce in and heat thoroughly.

Once the squash is cooked, take a fork and carefully scrape up the insides to make “noodles”! Place it on a plate and pour the sauce over it.

Voila! It looks just like regular spaghetti, but it has no pasta noodles, and there’s no meat!

This is a great dish for gluten free  meals, for meatless meals, and it’s a great way to get your veggies! Also, if you’re doing Weight Watchers, the points are very minimal because it’s pasta and meat-less… You’ll have to count the tofu and the sauce, depending on the type that you use! It’s very filling too!
