Yummy Winter Home Cooking- Sausage & Peppers Recipe

Believe it, or not, my hubby is the true cook in this house. I try, but he has some really good recipes. This is something that we love to make a lot. It’s quick, easy, and yummy! We got all of our ingredients at our local Walmart store, also making it very affordable! Check out this recipe post from my hubby:

During the winter months one of our favorite recipes is sausage and peppers.  It’s a warm, comforting dish that is easy to make with a low ingredient count, quick preparation and cooking time.  It’s a great dish to modify depending on the season or what you have on hand.  We normally serve this dish over white or brown rice, but I’ve served it with noodles once or twice in a pinch and it went over well.

Ingredients

Preparation (10 minutes)

SlicedSausageStart by cutting the bell peppers and onions into strips.  Set aside.  I like to keep them separated because they each need to be added at different times during cooking.

If you chose to add garlic, peel and cut the cloves to the size you prefer and set aside.  We often leave our garlic as larger chunks, but I’ve been known to mince the garlic to a fairly small consistency from time to time.  It larger depends on time available.

Cut the Kielbasa sausage into ⅛” rounds and set aside.

Cooking (15 minutes)

Make sure the rice or noodles are cooked prior to cooking.  This dish cooks rather quickly.

There are two different ways to cook this meal.  I alternate between them depending on time and pan available.  For smaller pans (or when you scale up the recipe), you can cook each ingredient separately and mix them together in a large bowl for serving.  Consider this a choose your own adventure; at the end of each step either remove the heated ingredient into the bowl or just add the next ingredient to the pan.

SauteedPeppersPlace a large pan on the stove on medium high heat.  Once the pan is hot, add the sausage.  Cook for about 5-7 minutes, stirring frequently.  Be careful not to burn or overcook the sausage.  Half way through I usually add the garlic so it adds flavor but doesn’t hang out in the pan long enough to burn.  Drain the excess fat from the pan and replace onto the stove.

Next, add the onion into the pan and cook for 3-5 minutes or until they just start to get soft.  Add a small amount of salt and pepper to taste.

Next add the peppers.  Cook until slightly soft or to your preference.  (We like our peppers to retain some of their crispness.)  Don’t forget to add garlic again.

SauceItUpFinally, add some BBQ sauce to the pan.  We use Sweet Baby Ray’s Sweet & Spicy sauce.  I usually use 2-3 tablespoons to add some flavor but not overpower.

Serving

Ensure you have mixed up all of the ingredients in the sauce well and serve next to or on top of the rice.
