Tame Your Sweet Tooth- Blueberry Lemon Sweet Rolls

Dessert… It’s on everyone’s mind. It’s that need to tame your sweet tooth after a long day of hard work, and a delicious dinner. It could be as simple as a popsicle, or a piece of fruit… or it could be something even better…

We love to use fresh fruit in our desserts, so when Walmart asked me to share a recipe using fresh fruit, I knew exactly which one I was going to share with you. I headed out to my local Walmart store to pick up everything I needed to make some Blueberry-Lemon Sweet Rolls.

What You Need:

FILLING

  1. 1 & 1/2 cups fresh blueberries (freeze before using)
  2. 1/4 cup granulated sugar
  3. 1 tsp cornstarch

ROLLS

  1. 2 and 1/2 cups  all-purpose flour
  2. 3 Tbsp granulated sugar
  3. 1 teaspoon salt
  4. 1 package instant yeast (1 pack = 2 and 1/4 teaspoons)
  5. 1/2 cup water
  6. 1/4 cup milk 
  7. 2.5 Tbsp unsalted butter
  8. 1 large egg room temperature

SWEET LEMON ICING

  1. Lemon Juice, either from 1 lemon, or approx 1&1/2 Tbsp
  2. 1 & 1/4 cup powdered sugar 
  3. 1 Tbsp half-and-half 

Blueberries are quite a big deal here in coastal NC… We even have a Blueberry Festival! We truly love our blueberries in this house and this recipe is one that we’ve used for years! I hope you like it!

Once we had all of our ingredients ready, we started the process…

How You Make It:

There are three steps to this recipe!

Filling: 

We’re going to do this step first so that it gets ready for the next step. First, combine the freshly frozen blueberries, sugar, and cornstarch in a small bowl. Stir it up to coat and set aside to thaw a bit while you move on to the next step.

Dough:

Set aside 1/4 cup of flour. In a large bowl, toss the remaining flour, sugar, salt, and yeast together until evenly dispersed. Set aside.

Heat water, milk, and butter together in the microwave until the butter is melted.

Slowly stir the milk/butter in with the dry ingredients. Add the egg and if needed, some of the reserved flour to make a soft dough. The dough will be ready to use when it cleanly pulls away from the side of the bowl.

Either in the large bowl, or on a lightly floured flat surface, knead the dough for about 5 minutes.

Spray a medium sized bowl with cooking spray and place the dough in the bowl to let rest for about 15 minutes.

Make the Roll:

After about 15 minutes, roll the dough out into  an approximately 14×8 inch rectangle.

Pour the slightly thawed, sugared blueberries on top and spread them to cover the dough surface.

Tightly roll up the dough.

Cut the roll into 10-11 pieces and place in a lightly greased 9-inch round pan. I used a silicone cake pan, sprayed with a light coating of nonstick spray.

Place a sheet of aluminum foil lightly over the pan and set them aside to rise in a warm, draft-free place for 1.5-2 hours. 

Bake:

Once the rolls have about doubled in size, set the oven to 375F. Bake for 15 minutes until lightly browned. Cover the rolls with that same sheet of aluminum foil and bake another 10 minutes.

Icing:

Mix all of the icing ingredients together and stir very well. A whisk may help with this. Top the rolls with the Lemon icing right before you serve.

This dessert is absolutely delicious. I won’t say that it’s good for you, but it’s definitely delicious, and great to make with fresh produce from my local Walmart Store…. Oh… One more thing… Did you know that Walmart has a 100% money back guarantee??? If you get your produce home, and it’s not as fresh as it should be, bring it back, with your receipt, and Walmart will give you your money back! Yes, I’ve had to use it a couple of times before, and I’ve never been disappointed.
